Easter Veggie Dinner Part 2 – Southwest Quinoa Corn Salad

Part 2 If you invite me to dinner AND you let me cook, I just go nuts. I love to cook ! I especially love to cook for others. I volunteered to make all the vegetable sides for Easter dinner today. Out come all my creativity and compulsions. Here is the feast ready to go:

Quinoa Corn Salad

This one was super easy, Tastes great and so good for you too. After rinsing well, cooked up some red quinoa in vegetable broth. added a can of corn, can of fire roasted tomatoes with garlic, some chopped red and green peppers and added 2 teaspoons of fajita seasoning. Thought about adding black beans but I only had a huge huge can–

  1. I thought this sounds great maybe we could buy a “small” can of black beans to go in it?

  2. I thought it would be tasty with avocado too, but wouldn’t keep as long in the fridge. Quinoa is so easy to cook, very neutral tasting and has lots of protein and vitamins.
